Clams in Garlic and White Wine Sauce

Image
Clams are seasonal and commonly available in summer months in local stores. I am a big time sea food lover and always in a hunt for a good bargain. I could not believe my eyes when I saw these beautiful jumbo clams are on sale in my local fish market. I bought two dozen of them home and soaked them up for 1 hr to get any excess sand or dirt out. When you buy clams, be sure all the clams are tightly closed; otherwise you need to throw the unopened ones later in the cooking process. Today I am going to make a great appetizer dish, clams in garlic and white wine sauce. This dish is so simple and rich, the resulting sauce is better than the clams themselves. ? Ingredients 2 tablespoon extra virgin olive oil (or butter) 6 garlic cloves, smashed 1/3 cup Italian parsley, chopped 1/4 teaspoon hot pepper flakes 1/2 cup dry white wine 2 lb fresh clams  1 red onion; chopped 1 small red bell pepper thinly chopped 1 green chili (optional) Directions: 1.In a large pan, heat oil over medium heat...

Spicy Roast Pork Tenderloin

Image
Pork loin tenderloin whole is a boneless cut taken from the inside of loin. The largest end is round and gradually tapers to the thin flat end. It is low in fat; this cut of pork is considered very healthy, rivaling the chicken breast as one of the leanest meats available. Very tender and juicy cut of meat, the tenderloin can be marinated, rubbed and seasoned generously as the meat has fewer flavors on its on than fattier cuts. There is nothing like having an unbelievably juicy and tasty roast pork loin with sweet potatoes and green beans over dinner. This recipe is quite simple and easy to follow; Roast pork will come out wonderfully moist and tender. If you keep just enough water in the bottom throughout the baking process makes a really flavorful juice. Ingredients: 1 pork tenderloin, about 1 pound 1 tablespoon paprika 1 1/2 teaspoons salt 1 1/2 teaspoons chili powder 1/4 cup honey 1 1/2 teaspoons ground cumin 1 1/2 teaspoons black pepper 2 tablespoons Dijon mu...

Easy Chocolate Pound Cake with hint of coffee

Image
I was craving for a piece of delicious chocolate pound cake for weeks and finally had sometime this weekend to do some baking. My favorite version of Chocolate Pound Cake is moist and buttery with just the right amount of chocolate flavor. This is one cake that does not need frosting, you can just eat plain. However, it makes a very nice dessert when served with fresh berries and softly whipped cream.  In this recipe I have added a hint of coffee to enhance the flavor; you can add ground cinnamon or almond to give a variety to the chocolaty taste. The good thing about this cake also is that it keeps for days and still stays moist; just make sure you keep it in a sealed container. This cake is very moist, rich and has the best chocolate taste. I hope you will enjoy this wonderful chocolate pound cake with your family and friends Ingredients :   1 1/2 cups butter, softened 3 cups white sugar 5 eggs 2 teaspoons vanilla extract 2 teaspoons instant coffee granules dissolved...

Roast Pumpkin Soup

Image
I used to not be very fond of pumpkin, specially in pies. For me, their purpose was mostly Jack o' lanterns and front porch decorations. But, a few years ago I discovered pumpkin soup and pumpkin risotto and pumpkin ravioli with burnt butter and I was hooked! I usually make Pumpkin soup after the first cold snap, but since it may be January before that happens and the weather is somewhat crisp I have made it now. Really tasty, easy to make, and best of all, makes the whole house smell like fall. (and yes, if you're wondering, that is what 'fall' smells like!) Any type of pumpkin will work, I usually purchase one of the smaller ones as I think they are a little bit tastier than just a regular field pumpkin. I garnished the soup with a few roasted pumpkin seeds. I get the type that are already shelled and saute them with a little olive oil, salt and pepper. Roasted Pumpkin Soup 4 cups peeled cubed pumpkin 1 large yellow onion, minced 6 cups chicken broth 2 cups heavy c...

Brussels sprouts go well with pasta and bacon and Its is comforting, hearty and delicious. Hope you will enjoy the dish!!! ? I am going make a vegetarian dinner for tonight.I bought Yellow Pumpkin, Collared Green and Bitter Gourd (Bitter Melon) from local farmers market. Todays unique ingredient, Bitter Melon is often used in Chinese cooking for its bitter flavor, typically in stir-fries (often with pork and douchi), soups.
