Side Dish Spicy Potato fry with onions and green chillies

Image
This is the holiday Season that every one is busy looking for a great side dish recipe to add to their party menu. I just cannot think of a party meal without good old potatoes. This is a very flavorful and easy to prepare  potato fry that gives a very rich and authentic taste with a good amount of spiciness, but not enough to hurt!  The Combination of spices goes well with the creamy boiled potatoes, caramelized onions and touch of tamarind adds the sweet and Tangy flavor to enrich your taste buds. This dish is traditionally prepared one day before the serving, so all flavors will be wonderfully absorbed to the potatoes. Ingredients: 5 Potatoes, boiled and skinned 2 Onions (chopped finely) 1tsp Chili powder 1 green chili chopped 1/4tsp Turmeric powder 1 Cinnamon stick 1/2tsp Mustard seed (grounded) 5-6 Curry leaves Salt 1 Tbl Spoon Tamarind Juice Directions: 1. Sweet Crepes with delicious caramelized coconut filling

Image
There are many variety of French dessert Crepe recipes available today ,most well known   desserts is   Crpes Suzette  features sweet crepes with orange liqueur. Adding the Tropical flavor to the traditional French Crepe recipe, I am going to make the sweet crepes with delicious caramelized coconut filling. Originally this recipe used freshly grated coconuts but I have substituted that for desiccated coconut   as it is easier to find in local farmers market. They are delicate and a little sweet, which makes a good contrast to the freshness of the filling. Ingredients: Crepe Batter 2 cups all-purpose flour   1 egg   Pinch of turmeric (optional) Pinch salt   1 cup milk, or as needed For the filling: 1 1/2 cups freshly grated coconut. (substitute: desiccated coconut ) 1/2 cup of Treacle (substitute: 2/3 cup of brown sugar, dissolved in 1/4 cup water) 3 cloves crushed. Pinch salt. Pinch pepper. Directions: 1.Combine flour, eggs and salt in a food proce...

Jamaican Jerk Chicken Curry with Red kidney beans

Image
The Island of Jamaica is famous for it's Fiery Jerk chicken, This unique dish is prepared by  jerking or poking of the meat with a sharp object, producing holes which were then filled with the spice mixture and then grilling it. Today I am going to make a jerk chicken curry with Kidney beans, a little variation from the traditional dry jerk chicken. Marinade recipe is still the same as traditional jerk chicken; I am adding tomatoes and kidney beans to make delicious gravy. You can still stick to the traditional jerk chicken recipe by grilling the marinade chicken and leave out the gravy part. (steps 1-2).This well balanced flavor of sweet, hot, herbal and spicy chicken can be served with rice, green beans or pasta. Ingredients: Chicken Marinade     3 1/2 lb chicken (3lb of chicken leg qtr or drumsticks) 6 sliced scotch bonnet peppers (jalapenos may be used if scotch bonnet peppers are unavailable)  2 Tbsp. thyme  2 Tbsp. ground allspice  8 Cloves garli...

Grilled Shrimp & Calamari with vegetables

Image
A very simple and easy marinade that makes your shrimp super delicious you don't even need cocktail sauce, I made this grilled shrimp, calamari and vegetables for appetizer today. It has Just enough flavor and seasoning enough to be noticeable, but in a way that enhances the shrimp rather than overpowering its own wonderful and delicate flavor. Generally Calamari doesnt have a whole lot of flavor in them, so I added coriander powder and ground cumin to spice up a little. This simple Calamari is fast and delicious to cook up - plus its low-fat compared to the usual deep-fried calamari. Grilled Shrimp and calamari recipe makes a great appetizer, or serve as the main course together with rice, a salad, or other side dishes. Ingredients - Grilled Shrimp 3 cloves garlic, minced 1/3 cup olive oil 1/4 cup tomato sauce 2 tablespoons red wine vinegar 2 tablespoons chopped fresh basil 1/2 teaspoon salt 1/4 teaspoon cayenne pepper 2 pounds fresh shrimp, peeled and deveined skewers Directions...
