Baked Stuffed Tomato loaded with veggies / cheese / nuts

This is a yummy recipe for all veggie lovers who love baked vegetables. I got inspired from internet that lists stuffed tomato indian recipes but I modified it to suit my idea of assortment of ingredients that go in the tomato shell. I am a tomato lover myself and therefore was excited to prepare this dish! The beauty of this recipe is that the options are open to be creative on the stuffing that goes in the tomato. Ingredients 10 Large Tomatoes 4 medium � large onions 2 bell peppers (choice of green, orange or yellow) 12-15 garlic cloves 10 � 15 indian green chillies (per your heat tolerance ;)) 1/3 bunch cilantro 1/3 lb cashews 1 lb paneer 3 tablespoons olive oil 1/3 stick butter Salt to taste 1 heaping teaspoon of roasted cumin powder 1 heaping teaspoon of roasted coriander powder Tomato Shell and Stew Preparation (Approximate Cooking Time : 45 minutes) 1. MUSHROOM BROTH PRIOR TO 45 MIN SIMMER READY TO SERVE SOUP This soup is a 2 stage preparation and has been described in a cookbook (Vegetable Soups with Deborah Madison's Kitchen) with too many ingredients. I have simplified it only for the purpose of highlighting the mushroom flavor in the soup. Roasted Vegetables Preparation (30 min cooking time) 1/2 lb chopped up portobello mushrooms ( 3 mm thickness, 1 -2 cm width) 8-10 baby carrots (slice each baby carrot into 1/2 thickness and then cut pieces that are 1/3 length of baby carrot) 1 russett potato unpeeled (1 in. wedges) 1)Toss them in olive oil with salt and pepper and lay vegetables on aluminum foil in baking tray. 2)Place the baking tray in oven that is pre-heated to 425 F. 3) Turn over the pieces after 15 minutes. 4) Remove the tray out of oven after another 15 minutes. Stemming back to the 1700's, King Cakes are the traditional celebratory cake of Mardi Gras. Originally king cakes were served at Mardi Gras Parties and the king cake held a bean inside instead of a plastic baby. When served, the "lucky" person having the bean on their plate was named the king or queen of the party, and was then responsible for holding the next Mardi gras party which would include all the guests present at the party where the bean was found. Living in South Louisiana, I have eaten more than my fair share of King cake. The bakeries make them in just about every flavor imaginable. Couscous is a North African dish that has become popular in many countries. It is traditionally served under a leg of lamb, camel, goat or vegetable stew. I particularly like the Moroccan version of Vegetable couscous, because of healthy ingredients and how all the different flavors blend together to make a perfect vegetarian dish. You can substitute the vegetables to your own preferences, but try to include the full variety to achieve an authentically flavored sauce. This recipe is bit time consuming than instant couscous recipe, but its so worth the effort. Mackerel is high in protein and calcium, and is a good source of Omega-3 fatty acids. It contains vitamin A and iron in useful quantities. Most people stay away from Mackerel because it is distinct fishy smell. But it is not any fishier than canned tuna or salmon. If you like sardines it won�t shock you in the least. One of the great benefits of mackerel is that it contains edible bones with a firm, mildly gritty texture. To get the full nutritional value of the fish, don�t discard the bones.
