Tandoori Chicken and Smashed Potatoes

Image
Tandoori chicken is a hugely popular North Indian dish consisting of roasted chicken prepared with yogurt and various spices. The name comes from the type of cylindrical clay oven (tandoor) in which the dish is traditionally prepared. However to make it at home, you can simply use the grill/oven.  I don't recommend this dish with chicken breasts; they'll dry out too easily. You can use the chicken legs/drumsticks for the recipe. The pieces should be skinless. Here's the recipe for amazing Tandoori Chicken dish. Ingredients 3 Tbsp olive oil 1 teaspoon ground coriander 1 teaspoon ground cumin 1 teaspoon ground turmeric 1 teaspoon cayenne 1 Tbsp garam masala 1 Tbsp sweet (not hot) paprika 1 cup plain yogurt 2 Tbsp lemon juice 4 minced garlic cloves 2 Tbsp minced fresh ginger 1 teaspoon salt 4 whole chicken legs (drumsticks and thighs), or its equivalent, skinless, bone-in  Directions: 1. Heat the oil in a small pan over medium heat, then cook the coriander, cumin, turmeric,

If you are a lamb steak lover, then you know that shoulder-cut lamb steak is best prepared by turning the meat into a Incredibly delicate steak recipe. Shoulder-cut lamb steak recipes tend to be tasty because the muscle there has had a lot of exercise and consequently has developed a stronger flavor than a portion of the lamb that didn't get much exercise. Bread is one of the few things in the world that has remained as an important part of our lives throughout history. It doesn't matter if you live in North America, Europe, Asia or Africa , bread will always have a special place on all our dinner tables. It may not be the center piece of our daily meal, but we would surely feel its absence if it wasn't there. Maine lobster with a slice of Lemon.

Fresh seafood is something everyone seems to enjoy. While vacationing in Maine ,I have found this three pounds of   Red lobster beauty right off from the evening Lobster boat, still fresh and so colorful, I could not resist making a meal out of it. Maine is all about seafood, including fresh fish, crabs, shrimp, lobsters, clams, oysters, scallops, mussels and more. Two species of lobsters are commercially harvested in the USA . The most common and familiar is the American lobster, also known as the Northern lobster or Maine lobster. The American lobster is found along the coast from Canada to North Carolina . Lobster is one of the healthiest and leanest proteins available. It contains less cholesterol, calories, and saturated fats than lean beef, pork, shrimp or even the light meat of chicken. Pound for pound, it is a healthy eating choice. Lobster Nutritional Values : Lobster meat contains omega-3 fatty acids, which is known to decrease the risk of heart disease. Lobsters are high

Recipe: Lemon Chili Pasta with Arugula and Capers

Image
Because summer is coming to an end I'm in the mood for heartier, spicier foods. For me crisp weather heralds comfort food, soups, curries, and all together heavier meals. However, the heat index is still in the hundreds here. So I've come up with another pasta dish which can be served hot or at room temperature or cold, my current favorite. These sort of meals will carry me over until I can break out my soup pot. This lemon chili pasta is one of my favorites. It's zesty, a little peppery, and yet still light and easy. At the end of a work day in the kitchen I don't feel like preparing a complicated meal. Pasta seems to be a recurring theme around here, and it's likely that if the saying "you are what you eat" holds true, I will one day soon turn into a noodle. But, it's a quick vehicle for flavor. So bear with me until this pasta (and arugula) phase passes. Use fresh red chilies if available. The farmers market did not have any this morning so

Recipe: Easy Banana Bread

Image
Passing on my love for food, baking and cooking is something I hope to do for my very picky little eater, Jack. I am trying a new approach to get him to try new foods, with the thought that if he gets excited about something we cook together he will then want to also eat it. I figured we would start with something he is sure to please him, banana bread. I also wanted Jack to be able to prepare it from start to finish without much intervention from me, so this was a great easy recipe. I used to not be a big fan of banana bread, I found them to sometimes be too soggy, heavy and not 'cakey' enough for me. This particular version is still moist, but has a bit more crumb to it than previous versions. I have made this as a cake in 2 - 9" pans and iced it with cream cheese icing, it makes for a nice banana layer cake as well. You can also add in nuts or chocolate chips. Easy One Bowl Banana Bread 4 cups mashed banana (about 5-6 bananas) 1/4 lb. butter, melted 2 cups sugar
